We also do the frozen pot pies. Also like the frozen Bertolli Mediterranean or Italian meals, skillet ready in 9 minutes, also Barber Foods frozen Stuffed Chicken Breasts Cordon Bleu. Bertolli also makes a good pasta sauce in a pouch that microwaves in 90 seconds, we've tried all three varieties and they are all good. They are in the pasta isle, not frozen. A number of Stouffers meals are good. Pierre Foods makes a frozen BarBQue Rib Sandwich with Sweet Baby Ray's Sauce. Sam's has those.
We travel a month to 6 weeks in our Class B motor home and don't have an abundance of storage or fridge/freezer space. We can usually have room for 5 or 6 dinners and they are all cooked in the microwave, toaster oven or 2 burner cooktop.

No apology necessary. I just wanted anyone interested in making this delicious dessert/salad to know to drain the pineapple. I thought it might be too thin if the juice was included.

I found my answers on allrecipes.com. They have this exact recipe and it got very good reviews. You do drain the pineapple and yes it has a pink tint.

Nesting Cookware Set

I just received a set of nesting cookware with removable handles. It is the Jamie Oliver Survival Kit by T-Fal.
We have a Class B motor home with limited storage space. This set when nested is only 11" by 6" and is just what I was looking for.
I've seen other sets but they were too heavy when nested. These are not at all but the pans themselves are a nice weight.
I just thought someone out there may be interested. I purchased them from HSN.

I was thinking of a deep Corning Ware casserole or large Pyrex or oven proof casserole. I've heard of people covering pot handles with aluminum foil but I have never tried that.

I would put an open box of baking soda and a roll of paper towels inside and keep the door closed while traveling. When we are not using our van we always keep the door open. I like air to circulate and would rather be safe than sorry.

We just got home from Sam's and the B&D is $58 there. If we had room for it in our Class B, I'd buy it in a minute. I took measurements to compare with the toaster oven we usually take. I think you will like the convection feature as it circulates air for more even cooking. The regular toaster ovens tend to over cook or burn some things on the bottom. Good luck in your decision.

Our LTV has a 5 cf fridge/freezer (3 way). I've never seen a larger one in a B. We travel 4 to 6 weeks at a time in our van and can fit about a weeks meals in the fridge/freezer (breakfast, lunch, and dinner). We travel, not camp, so grocery shopping once a week is not a problem. In fact we enjoy shopping all over the country. We do not have a portable freezer or carry a cooler.
Our B has the elevated fridge and microwave. This is our preference and we find it to be much more user friendly than the low, floor placement. Something you may want to consider when shopping for a B.

Do you use the already prepared cake from the bakery section in the grocery store?
We do not have an oven in our Class B motor home so I would have to use a store bought cake.
We will be attending a rally and pot luck at the end of a 6 week trip. This sounds like a great dish to make for that. We do not want leftovers that have to be refrigerated as our fridge is fairly small.

Glad to hear your first trip was such a success and you are keeping your B.
In September we will be taking our third 10,000 mile trip. Probably be gone 6 weeks or so.
We wouldn't trade this way to see our country for anything.

Our Travasak has Velcro all the way around and we've never had any problems with the zipper in 3 years. The sheets are also very good quality. Can't recommend it enough.

In our LTV we store it under the electric sofa. We fold the Travasak in half lengthwise, roll it up and secure with two Velcro straps. Our pillows are stored in an overhead cabinet.
